The way to make your banana bread ultra soft is to add applesauce! I made my second batch ever yesterday, and I decided my first batch was a little too dry. So, one of my coworkers suggested I use applesauce instead of adding more butter. I liked that idea, so I added it, and VOILA! Super moist, and oh-so-tasty whole wheat banana bread!
I just use the Betty Crocker recipe, substituting whole wheat flour for the white flour, and then adding sunflower seeds, flax seeds, and oatmeal to the mix. It's so incredibly good! If you like that sort of stuff, anyway. :) Even Madeleine is eating it like it's a yummy treat. I'll be making it that way again in the future!

Sounds soooo yummy! Last time I made banana muffins I added applesauce too! Except I did half and half with the flour, I think next time I will just use wheat flour. :)
Wow! You are sooooo behind in the times! Pretty much anything you bake you can substitute the oil or butter for applesauce. It's also a much healthier option.
